This veggie pesto sandwich is vegan, packed with veggies, and easily customizable to suit your preferences. It’s great for an easy lunch!

Ingredients
Here is everything you will need to make this veggie pesto sandwich:
- Bread of choice – Use gluten-free if needed.
- Vegan pesto – Tap the link for my vegan pesto recipe, or use a store-bought vegan pesto. Pesto usually contains cheese, so make sure you use a vegan one! The one from Trader Joe’s is delicious! Check out this post of other vegan pesto brands.
- Ground black pepper – You’ll just need a sprinkle of pepper for your pesto sandwich.
- Romaine lettuce – I like romaine, but you can also use any other lettuce or leafy green of choice. Some baby spinach would be a good option.
- Vegan cheese (optional) – Sometimes I like to add a slice of vegan cheese to this pesto sandwich, but it’s still great without any vegan cheese. Leave this out if you don’t have any or if you want to avoid more processed ingredients.
- Cucumber slices
- Tomato slices
- Sliced red onion
How to make this veggie pesto sandwich
You can layer the ingredients in your sandwich any way you want, but you can see how I do it below.
First, toast your bread if desired.
Next, spread your pesto evenly onto both slices of bread.
Sprinkle some ground black pepper on one or both slices.
Place a piece of romaine lettuce on one slice of bread. This will be the base on top of which you will add all the other ingredients.
Next, add vegan cheese if using.
Add some cucumber slices.
Add some tomato slices.
Add some sliced red onion.
Top everything with another piece of romaine lettuce to hold everything in place, then place the other slice of bread on top.
Tips
- Make sure you spread pesto on both slices of bread. This will ensure that one slice of bread isn’t dry and it will cover a larger area.
- Slice your vegetables thinly. This is just my personal preference, but I find it easier to layer and close the sandwich if the cucumber and tomato slices aren’t too thick.
Substitutions and adjustments
- If you are using large bread slices, go ahead and add some more pesto. It’s best to have a nice thick layer on both slices.
- Pesto is the star of this recipe, but all other ingredients can be adjusted or eliminated to suit your preferences. Don’t like tomato? Leave it out. Want some pickles? Add them!

Veggie Pesto Sandwich
Ingredients
- 2 slices bread of choice
- 3 tablespoons vegan pesto*
- Sprinkle of ground black pepper
- 1 leaf of romaine lettuce
- 1 slice of vegan cheese (optional)
- Cucumber slices
- Tomato slices
- Sliced red onion
Instructions
- Toast bread if desired.
- Spread pesto on both slices of bread. Use more if needed.
- Sprinkle ground black pepper on the pesto.
- Place half of your romaine leaf on one slice of bread.
- Add a slice of vegan cheese, if using.
- Layer on cucumber slices.
- Add tomato slices.
- Add sliced red onion.
- Place the other half of the romaine leaf on top and close your sandwich.
