This vegan cucumber hummus sandwich is super easy to make and absolutely delicious. You can easily use gluten-free bread to make this sandwich gluten-free, as none of the filling ingredients contain gluten.
I have been obsessed with this cucumber hummus sandwich recently! It’s savory and satisfying and filled with plenty of nutritious ingredients.
Some people can’t image eating a sandwich without any meat or cheese, but this cucumber hummus sandwich is a great vegan sandwich option!

Ingredients
Quantity suggestions for some ingredients can be found in the recipe card below, although you can add as much or as little of each ingredient as you like.
Amounts may also vary based on the size of bread slices you use.
- Bread of choice
- Roasted garlic hummus
- Thin cucmber slices
- Romaine lettuce
- Pickle slices
- Shredded carrot
- Alfalfa sprouts
- Thinly sliced red onion
- Sprinkle of ground black pepper
How to assemble
You can layer your sandwich ingredients however you’d like, but here is how I make this sandwich, step by step!
Start by evenly spreading the hummus onto both slices of bread.
Add some Romaine lettuce on one piece of bread to create a base to pile on your toppings.
Next, I like to lay out the cucumber slices in three rows.
Next, sprinkle some ground black pepper on the cucumber slices.
Layer on the other toppings, ending with another piece of Romaine lettuce to help hold everything in.
Place the other piece of bread on top and enjoy!
Substitutions
As this is such a simple sandwich recipe, you can of course leave out anything you don’t like!
Some people really don’t like the taste of raw onion, so you can leave that out and you’ll still have a delicious sandwich.
You can also add in any vegetables or other ingredients that you enjoy. Many people like to add tomato slices to their sandwiches, so add some if you’d like!
For the hummus, I recommend roasted garlic flavored hummus. This can be homemade or store-bought.
Getting store-bought is quick and easy, but if you want an oil-free hummus you may need to make your own.
