Vegan Gluten-Free Peanut Butter Cookies

These vegan peanut butter cookies are easy to make, gluten-free, and only require 5 ingredients!

Ingredients

  • 1 cup natural peanut butter
  • ¼ cup maple syrup
  • ½ teaspoon vanilla extract
  • ¼ cup + 2 tablespoons coconut sugar
  • ½ cup almond flour

Instructions

  • Set your oven to 350 degrees Fahrenheit.
  • Combine everything except the almond flour in a mixing bowl.
  • Mix in the flour to form a dough.
  • Form balls using 1 tablespoon of dough per ball.
  • Set the balls of dough on a baking sheet lined with parchment paper to prevent sticking.
  • Flatten the balls of dough with a fork.
  • Place the baking tray in the oven and bake for 10 minutes.
  • Remove the cookies from the oven and leave them to cool without touching them for about 10 minutes.
  • Gently transfer the cookies to a cooling rack to cool completely before storing.

Notes

This recipe makes about 28-30 small cookies using 1 tablespoon of dough per cookie.
