Vegan Tzatziki (Oil-Free)

This vegan tzatziki is great as a dairy-free and gluten-free sauce or dip! It is creamy, tasty, and a great substitute for a traditional tzatziki.

Ingredients

  • 1 cup cashews (+ water to soak)
  • ½ - ¾ cup water
  • 3 garlic cloves
  • 1 tablespoon lemon juice
  • ¼ teaspoon salt
  • 1 cup cucumber (grated)
  • 2 tablespoons fresh dill

Instructions

  • Start by soaking your cashews. The fastest way is to boil water with an electric kettle, then pour the water over the cashews in a bowl and cover the bowl. Let sit for 20 minutes, then drain the water and your cashews are ready to use.
  • Once your cashews are soaked, add them to your blender or food processor with ½ cup of water. Blend until smooth, using more water if needed.
  • Next, blend in the garlic, lemon juice, and salt.
  • Prepare your cucumber by grating it and measuring 1 cup. Then squeeze out the excess liquid before adding it to your blender or food processor. If you want some texture to your tzatziki, pulse it without fully blending.
  • Add your dill and pulse until desired texture is reached.
