- 1 cup cashews (+ water to soak)
- ½ - ¾ cup water
- 3 garlic cloves
- 1 tablespoon lemon juice
- ¼ teaspoon salt
- 1 cup cucumber (grated)
- 2 tablespoons fresh dill
Start by soaking your cashews. The fastest way is to boil water with an electric kettle, then pour the water over the cashews in a bowl and cover the bowl. Let sit for 20 minutes, then drain the water and your cashews are ready to use.
Once your cashews are soaked, add them to your blender or food processor with ½ cup of water. Blend until smooth, using more water if needed.
Next, blend in the garlic, lemon juice, and salt.
Prepare your cucumber by grating it and measuring 1 cup. Then squeeze out the excess liquid before adding it to your blender or food processor. If you want some texture to your tzatziki, pulse it without fully blending.
Add your dill and pulse until desired texture is reached.
