VEGAN MACARONI SALAD

Step 1

Start by cooking 300 grams of macaroni. Use gluten-free if necessary.

In a large bowl, mix cooled macaroni with the other salad ingredients.

Salad ingredients: - 300 g macaroni - 1/3 cup red onion - 1/2 cup red pepper - 1/2 cup celery - 1/2 cup sweet green relish - 2 tbsp fresh dill

In a blender, blend: - 1 1/2 cups softened cashews - 3/4 cups water - 1.5 tbsp Dijon mustard - 1.5 tbsp ACV - 3 tbsp lemon juice - 3/4 tsp garlic powder - Sprinkle salt and pepper

Pour the dressing on the macaroni salad

Mix everything together, then refrigerate.
