VEGAN COLLARD GREEN WRAPS

Cut off the stem.

To prepare your collard leaf:

Slice the stem all the way down the leaf.

1/2 cup quinoa, 1/2 cup chickpeas, 1/4 cup red cabbage, 1/4 cup shredded carrot, 1/4 cup green onion, 1/4 cup green pepper, dressing of choice.

Make the filling:

Place some of the filling along half of the leaf, lengthwise.

Start rolling the collard leaf over the filling.

Fold in the sides of the collard leaf.

Finish rolling the collard wrap.

The filling is enough to make 3-4 wraps.
