Vegan Broccoli Salad

Start by soaking 1 1/2 cups of cashews. It is fastest to pour boiling water over a bowl of cashews and let it sit for at least 15 minutes.

Chop 4 cups of small broccoli florets and add to a large bowl.

Add the following ingredients to your bowl:

- 1/3 cup chopped red onion - 1/2 cup chopped red cabbage - 1/4 cup raisins - 1/2 of a Gala apple, chopped

Make the dressing

Drain the soaked cashews and add them to a blender or food processor.

Add the following: - 3 tbsp apple cider vinegar - 4.5 tbsp maple syrup - 1/2 cup almond milk - 1.5 tsp garlic powder

Blend the dressing and pour it over the salad.

Mix, chill in the fridge, then enjoy!
