HUMMUS PASTA SALAD

This hummus pasta salad is:

- Vegan - Gluten-free (make sure you use GF pasta) - Creamy -So easy to make - Can easily be adjusted with substitutions

Start by cooking your pasta according to package instructions.

Prepare the vegetables while the pasta is cooking:

- 1 cup chopped cucumber - 1 cup sliced red bell pepper - 1/2 cup shredded carrot - 1/4 cup sliced red onion

Once the pasta is cooked, rinse it with cold water and add it to a large bowl with the vegetables.

Make the dressing

Mix the following: - 1 cup roasted garlic hummus - 1/2 tbsp lemon juice - 1/4 cup water - 1/4 tsp black pepper - 1 teaspoon dried dill weed

This pasta salad is so creamy and satisfying!

Top with chives or basil if desired, and enjoy!
