These oil-free potatoes are great as a breakfast side. They are flavorful and crispy, and great for anyone trying to avoid oil.


Wash and chop 2 cups of diced potatoes. In a bowl, mix potatoes with 1.5 tsp. maple syrup, 1/2 tsp. garlic powder, 1 tsp. onion powder, 1 tsp. Italian seasoning, pinch of salt and pepper.


Spread out the potatoes on a parchment-lined baking tray.

Bake at 425 degrees Fahrenheit for 15 minutes, then mix and bake another 10-15 minutes.

These oil-free potatoes are great plain or topped with hot sauce. I love having them with some tofu scramble!
