Chocolate Peanut Butter Bars (No-Bake)

These chocolate peanut butter bars are vegan, gluten-free, and insanely delicious! They are super easy to make and are just what you need to satisfy your chocolate peanut butter craving.

Ingredients

Base

  • 1 ½ cups natural peanut butter (no added oil or sugar)
  • ½ cup maple syrup
  • 1 ½ cups fine almond flour*

Instructions

  • In a mixing bowl, add 1 ½ cups of peanut butter and ½ cup of maple syrup. Mix together until evenly incorporated.
  • Add the almond flour to the same mixing bowl and mix it in. You may need to use your hands because it will turn into a thick dough. See note below regarding the amount of almond flour.
  • Line an 8 x 8 inch baking dish with parchment paper, then press the dough into it. It will be thick, so press it down with your hands if needed.
  • Place the dish in the refrigerator for 15 minutes.
  • Once the base has chilled, place the chocolate chips and 4 tablespoons of peanut butter in a microwave-safe bowl. Heat in the microwave for 1 minute, then check if it can be stirred into a smooth sauce. Microwave for additional 30 second increments if needed.
  • Pour the melted chocolate and peanut butter onto the base of the bars and spread it out evenly. Place in the fridge to set for 3-4 hours.
  • Once the bars have set, you can cut them into squares. Store in the fridge.

Notes

*You may need to add up to an additional ¼ cup of almond flour to make your dough thick enough if it feels too soft. This will depend on the texture of your peanut butter, how fine your almond flour is, and how you measure your flour, so it's tough to give an exact measurement.
If your bars are still a bit soft when you cut into them, let them sit in the fridge for a while longer.
