Vegan Chocolate Covered Strawberries

These vegan chocolate covered strawberries are super easy to make and so delicious! Only 2 ingredients are required, and various toppings are optional.

  • Wash and dry the strawberries. Dry them thoroughly or else the melted chocolate won’t stick to them well.
  • Prepare any toppings on plates so you can roll the strawberries immediately after dipping them in melted chocolate. I like to prepare a plate of chopped peanuts and a plate of coconut flakes.
  • Melt the chocolate in the microwave or on the stove. If using the microwave, place the chocolate chips in a microwave safe bowl and microwave in 30 second intervals, mixing after each 30 second interval. I find it takes about 1 ½ minutes. If using the stove, put about an inch of water in a pot, then place a heat safe bowl on top of the stove, ensuring that the bottom of the bowl does not touch the water. Place the chocolate chips in the bowl and heat on low. Stir until the chocolate is completely melted.
  • Hold the strawberries by their stems and dip them in the melted chocolate.
  • Immediately after dipping in chocolate, roll the strawberries onto your plates of toppings if desired, then place them on a tray or plate lined with parchment paper.
  • Set the tray or plate of strawberries in the fridge for 30 minutes to set the chocolate. Eating these chocolate covered strawberries immediately after the chocolate has set is best.

Notes

If you have leftover chocolate covered strawberries, you can store them in the fridge. If they are in the fridge for several hours, the chocolate will be quite hard when you take them out, so it is best to let them sit out for 20 minutes before eating.
If you have extra melted chocolate and not enough strawberries to dip, you can use the melted chocolate as a dip for other fruit, but do it quickly before the chocolate hardens.
