Onion Cashew Cream Cheese

This cashew cream cheese is:

- vegan - gluten-free - oil-free - savory - versatile - easy to make

- 1 cup cashews - 1/4 cup water - 1 tbsp apple cider vinegar - 1/2 tbsp lemon juice - 1 tsp onion powder - 1/4 tsp salt - 1-2 tbsp chopped chives

Ingredients

Start by soaking your cashews to soften them. The fastest way is to let the cashews sit in a covered bowl of boiled water for 20 minutes.

Once the cashews are softened, add all ingredients except chives to a food processor.

Blend until smooth.

Mix in the chopped chives.

Enjoy on bagels, in sandwiches, with crackers, veggies, and more!
