VEGAN CREAM CHEESE STUFFED DATES

- Mejool dates - Cashew cream cheese - Chopped walnuts or pecans
Ingredients for the cashew cream cheese:
- 1 cup cashews -1/4 cup water - 1 tablespoon apple cider vinegar - 1 tablespoon lemon juice - 3/4 teaspoon onion powder - 1/4 teaspoon salt - 1-2 tablespoons chopped chives
Start by making the cashew cream cheese or use a store-bought vegan cream cheese. Soak cashews, then blend everything in a food processor.
Place about 1 teaspoon of cashew cream cheese into each date.
Top with chopped walnuts or pecans and enjoy!
Use the leftover cashew cream cheese on bagels, veggies, and crackers!
